Chemex
While there are multitudes of ways to brew a great cup of coffee, Chemex has become one of our favorites. Using the manual drip/filter method of brewing, a Chemex will produce an incredibly clean, full flavored cup of coffee. This coffeemaker was invented in 1941 by the German chemist, Peter J. Schlumbohm, Ph.D. He took what he knew about chemistry and applied it to one of his favorite beverages, modifying lab wares to create an apparatus that is perfect for brewing coffee.
Necessary Equipment: Chemex Coffee Maker, Chemex filters A quality coffee grinder , Water kettle, Tablespoon measure (or gram scale), Fresh-roasted, PT’s coffee from Dancing Mule Coffee Company, Filtered, but not distilled, water
Step 1 – Measure out one rounded tablespoon of coffee (6.25 grams = 1/4 oz) for every 4 ounces of water. A 6 cup Chemex will hold 32 ounces of water if you fill it up to the bottom of the collar. If you only fill it up to the dimple, it holds 16 ounces of water.
Step 2 – Boil the filtered water in the kettle or on the stove and set it off to the side. It will need to sit about 45 seconds before it is ready to pour over the coffee.
Step 3 – Grind the coffee a little finer than you would for regular auto drip. After it is ground, put the coffee in the filter. It helps to wet the filter to hold it in place and pour the water out.
Step 4 – After the water kettle has sat for about 45 seconds and reached a temperature of 195-200 degrees F, aggressively pour the water over the coffee grounds in filter, filling it up about ¾ full. As the water filters through the coffee, keep pouring the water into the filter so that it stays about ¾ full.
Step 5 – When the brewing cycle is finished, throw away (or compost) the filter and grounds.
Step 6 – Pour and serve!
